Polenta with bacon and cottage cheese from Croatia
Line a baking tray with parchement paper, set aside.
Render diced bacon on medium low heat for approximately 20-30 minutes until it crisps up.
While bacon is frying, place water, milk and butter in a large pot. Bring to a boil.
Once the mix is boiling, turn the heat down to medium and gradually add polenta, stirring continously with a whisk, so thr polenta would not clump and burn. Cook for approximately 30 minutes.
Once polenta has thickened, remove from heat and add crispy bacon. Season to taste with salt and pepper.
Pour polenta into a prepared sheet pan. Spread out evenly with a rubber spatula.
Bake for 20 minutes
Once it's bake, cover it with a mix of cheese, sour cream, and garlic.
