''Pittule'' are delicious balls of leavened dough, fried with anchovies, pizzaiola style or plain. You
can add other ingredients to the dough if you like.
1- Take a tall bowl and mix together flour, a little salt, yeast and water. After a while you
should have a soft dough.
2- Leave to rise for a few hours, covering the bowl with a cloth. Then, take the bowl again and
beat the dough inside several times.
3- Pour a little oil into a pan and let it smoke. When it is hot, gradually take as much of the
dough as you can fit in a closed hand and fry it until it becomes golden. Each part of the
dough will thus become a pittula.
Serving tip
Use sheets of straw paper forming cones and place them on a plate with
forks.
