Semolina pudding is a smooth, creamy dessert made from semolina cooked with milk and a little sugar. It sets into a soft pudding that can be served plain or with fruit sauce, cinnamon, or jam. It is a classic, comforting dessert in many European countries.


Recipe

1. Make the pudding

Lightly grease a pudding mold or bowl with butter.

Slowly bring the milk to a boil with the sugar, vanilla, and a pinch of salt.

While stirring, sprinkle the semolina into the boiling milk.

Let it simmer for 5–7 minutes until it thickens. Keep stirring to prevent lumps.

Pour the pudding into the mold.

Let it cool, then refrigerate for at least 2 hours until set.

2. Berry sauce

Bring the berries, sugar, and water to a boil.

Let it simmer for 5 minutes.

Want it thicker? Dissolve the cornstarch in a little cold water and stir it in.

Cook for 1 more minute.

Let it cool.
