Description

This lingonberry-gin sauce is a rich, tangy Estonian-style sauce made by boiling lingonberries with stock, gin, and herbs. It is reduced until smooth and finished with butter for a silky, flavorful result.


Recipe

Add a little thyme, crushed lingorir berries. Boil
⅓ of the stock, strain. Add 300 ml island gin, boil. Season with honey, a little salt and pepper. When the sauce has boiled down to the right consistency, add the cold butter pieces. Check the taste.
