This is an Estonian baked pork tenderloin made with garlic, thyme, honey, and oil. The meat is browned and then cooked slowly in the oven, making it very tender and tasty. It is a simple and classic home-style dish.
Clean the pork tenderloin from the membranes, press the garlic, chop the thyme and mix with the oil. add salt, pepper and honey. Rub the resulting mixture onto the meat. Let the flavors developfor an hour and brown the whole fillets in a hot pan on all sides. Place in the oven at 63 degrees to cook for 1 h and 20 min. Throw a wet towel over the pan and quickly place it in the oven with the meat.
Leve the pan in the oven until the meat is done.
