Description

A traditional French frozen dessert made of crisp meringue,
ice cream and sorbet (often vanilla & raspberry), assembled
into an entremets and covered with whipped cream. Light,
fresh, and perfect for festive occasions.


Recipe

Make the meringues
1. Whisk the egg whites with a pinch of salt.
2. Add the sugar gradually until stiff, shiny peaks form.
3. Pipe or spread two discs of meringue onto a baking tray.
4. Bake 1 hour at 100°C, then let cool completely.

Prepare the whipped cream
1. Whip the cold cream with the icing sugar.
2. Chill until needed.
3. Assembly
1. Place a meringue disc inside a cake ring.
2. Spread a layer of vanilla ice cream.
3. Add a layer of raspberry sorbet.
4. Place the second meringue disc on top.
5. Cover the entire dessert with whipped cream.
6. Freeze for at least 1 hour before serving.

Serving
1. Decorate with red fruits, meringue pieces, or coulis
