Tradicional Lithuanian dish is - Pork roll stuffed with carrots and mushrooms. It is a hearty and aromatic dish that often decorates the festive table due to its bright taste and beautiful appearance. The oven-roasted potatoes give it a cozy, home-cooked feel, while the mildly sweet and sour cranberry sauce highlights the combination of meat and vegetables. This dish is a favorite because it combines traditional Lithuanian flavors with festive sophistication.
Preparation
Select the pork, prepare it for the roll (maybe flatten it, wrap it with the mushroom filling).
Clean the mushrooms (0.5 kg), cut it, fry it with butter (0.200 kg), garlic (1 pc), pepper, salt, thyme.
Sprinkle the pork with salt, pepper, thyme, cumin, nutmeg; put the mushroom filling inside and wrap it.
Use the oranges (3 pcs) — their peel and juice — for the cranberry sauce. Mix the cranberries (0.300 kg) with sugar (0.150 kg), honey (0.050 kg), orange juice, and a little salt. Cook the sauce until the cranberries burst and thicken.
Peel the potatoes (2 kg), cut them into pieces and bake or steam them, season with butter, salt, and pepper.
Bake the roll in the oven: cover it at first, then uncover it and brown it nicely (about 1 hour for the first stage + ~30-40 min for the second, depending on the thickness). Let it rest for ~10-15 min before cutting.
Serve: cut the roll into pieces, pour over the cranberry-orange sauce, side dish – potatoes + you can additionally serve a mushroom garnish.
