Bakalar Bianco is a traditional Dalmatian dish made from dried salt cod that is soaked, boiled, and blended into a smooth, creamy mixture with olive oil, garlic, and potatoes. It is typically served warm, often during Christmas time, and is loved for its rich flavor and silky texture.
1. Prepare the salt cod:
Rinse the dried salt cod and soak it in cold water for 24–48 hours, changing the water several times to remove excess salt.
2. Cook the cod:
Drain, place in fresh water, and simmer until the cod becomes soft and flakes easily (about 40–60 minutes). Remove any skin and bones, then break the fish into small pieces.
3. Cook the potatoes:
Peel and boil the potatoes in salted water until tender, then drain.
4. Combine fish and potatoes:
While still warm, place the cod and potatoes together in a large bowl or pot.
5. Mash and blend:
Add chopped garlic, then gradually pour in olive oil while mashing and mixing the ingredients.
Mix until you get a smooth, creamy texture.
If needed, add a little warm water or milk to achieve the desired consistency.
6. Season:
Add salt and pepper to taste (careful with salt because the cod may still be salty)
7. Serve:
Sprinkle with chopped parsley if desired.
Serve warm or at room temperature with bread, toast, or as a spread.
