A creamy and aromatic rice pudding cooked slowly with milk, lemon zest, and cinnamon, finished with a classic cinnamon lattice on top.
• Rinse the rice under cold water.
• Cook the rice in water with salt, lemon peel, and a cinnamon stick.
• Warm the milk separately.
• Add the warm milk gradually to the rice, stirring until creamy.
• Add sugar and mix well.
• Off the heat, add the egg yolks and stir quickly.
• Remove the lemon peel and cinnamon stick.
• Pour into bowls and cool.
• Dust with ground cinnamon.
