A traditional Portuguese starter made with toasted rustic bread, rubbed with garlic, drizzled with new-season olive oil, and topped with tender flakes of salt cod confit. Finished with parsley and black olives.
• Toast the slices of rustic bread until golden.
• Rub each slice with a fresh clove of garlic.
• Confit the desalted cod in olive oil with garlic over very low heat.
• Flake the cod and place it over the toasted bread.
• Drizzle with new olive oil.
• Garnish with chopped parsley and black olives.
• Serve warm.
