These are traditional appetizer salads in Latvia.
1. Boil the carrots and potatoes and beets.
2. Separately, boil the pre-soaked beans.
3. Take equal parts of carrots, potatoes, boiled beets, pickled cucumbers and cut into cubes. Add the same amount of boiled beans.
4. For a better taste, add a finely chopped small onion.
5. Peel and dice one apple.
6. All this is sprinkled with a sauce made from oil, salt, pepper, 2 tbsp. lemon juice or apple vinegar.
7. Mix and let the vinaigrette infuse and absorb the flavors.
