This is a traditional, hearty and warming porridge in Latvia during winter and Christmas, when it is cold.
1. Peel the potatoes, cut into cubes. Boil water, add the potatoes, bring to a boil, add the barley groats rinsed in cold water, adjust the heat to the lowest setting, cook slowly, stirring until they thicken, then add hot milk, add salt and cook until the groats and potatoes are soft.
2. When the porridge has thickened considerably, stir constantly to prevent it from burning. If the liquid boils away too quickly, you can add more water or milk.
3. Cut the smoked bacon and onion into small pieces, fry in a pan until crispy, add pepper and, if necessary, salt and serve with the finished porridge.
