A simple recipe typical of the Christmas menu and especially of New Year's Eve , a variation of the classic Lentils and cotechino , a dish that brings good luck for the new year that is beginning.
Start preparing the recipe by making the mashed potatoes .
Wash the potatoes thoroughly under running water to remove any dirt residue and boil them with their skins in plenty of water for about 30 minutes.
Obviously, cooking times vary depending on the size of the potatoes, so check for doneness with a fork.
If the fork goes in easily, the potatoes are done; otherwise, let them cook until tender.
When the potatoes are cooked, place them on a plate and peel them while still hot.
Pass them through a potato masher and collect them in a container.
Place the pureed potatoes in a saucepan and cook over low heat for about 20 minutes, slowly adding the milk and stirring constantly to avoid lumps.
