Torta Tenerina was created in honor of Helen of Montenegro.
This cake, in fact, is also called Torta Montenegrina because it was created in honor of the tender-hearted Queen of Italy.
The sovereign was very dedicated to charity. She helped earthquake victims in 1908 and 1921. During the First World War, she transformed the Quirinale and Villa Margherita into hospitals for the wounded. To raise the necessary funds, she decided to sell autographed photos, a novelty at the time, so as to raise as much money as possible to help the wounded.
She was also opposed to the Second World War and wrote to numerous European sovereigns urging them to avoid war.
She went down in history as a tender-hearted queen, hence the Torta Tenerina. This cake is also famous for being called the "lovers' cake," a symbol of the great love between the two.
Melt the butter and chocolate in a bowl over a bain-marie until smooth and glossy. Once cooled, add the egg yolks and sifted flour a little at a time. Separately, beat the egg whites until stiff and fold them into the remaining mixture, stirring from the bottom up. The mixture will become frothy. Line a 24 cm cake pan with parchment paper, pour the batter into it, and bake at 180°C for 15 minutes. Once cooled, sprinkle with powdered sugar.
