A sweet creamy dessert made with local fresh soft unsalted cheese. Flavoured with cinnamon and citrus floral water topped with honey, crunchy filo pastry and roasted walnuts.
Method of preparation:
Whip the Anari cheese in a mixer using the whisk attachment. Add the sugar, rose water, vanilla and cinnamon and continue whisking until fluffy. Add the cream and beat until slightly thickened.
To assemble, crush the phyllo sheets and use half to cover the base of a serving bowl. Mix honey with water to thin it. Add spoon of the honey mixture on the phyllo. Sprinkle with walnuts.
Top with the anari cream. Finish with another layer of crushed phyllo, honey and walnuts. Chill before serving.
