Our appetizer inspired by traditional products presented with the touch of Gourmet approach
• Cheese balls with tomato marmalade
• Cyprus sausage with peppers & cherry tomato in mini Brioche
• Halloumi & Lountza in pitta bread


Recipe

• Cheese balls with tomato marmalade
Method of preparation:
Grate the cheese
Combine all ingredients in a bowl and mix until to get a stiff mixture.
Form into small balls and place in the fridge for 20 minutes.
Cover with flour and deep fry.

Cut the tomatoes in half.
In a pot place all ingredients together
Cover and bring to boil
Simmer for 30 minutes
Discard the bay leave, cinnamon and o.c
Serve with cheese balls.



• Cyprus sausage with peppers & cherry tomato in mini Brioche

Method of preparation:
Cut all ingredients in small dice shape (macedoine)
Sauté the peppers for 3 min. and add the sausage.
Pour in the wine and simmer for 10 min.
Add the tomatoes & oregano and turn off the heat.
Place the mixture over toasted bread dressed with olive oil and oregano or cut a small brioche bread and stuff the mixture.



• Halloumi & Lountza in pitta bread

Method of preparation
Cook the halloumi and lountza over the grill.
Warm up the pitta bread
Make a small cut and place all ingredients inside the bread.

Ingredients

• Cheese balls with tomato marmalade
Ingredients:
100 gr Kaskavali cheese
100 gr Anari
100 gr Halloumi
2 Eggs
50 gr all purpose flour + 50 for frying
1 t sp. Dry mint
Sunflower oil – for frying

Tomato marmalade dip:
200 gr cherry tomato
50 gr sugar
Salt & pepper
1 bay leave
1 cinnamon stick
1 T sp. Balsamic vinegar
½ lemon juice & zest
1 small onion + 6 glove sticks (onion cloute)



• Cyprus sausage with peppers & cherry tomato in mini Brioche
Ingredients:
250 gr traditional Cypriot sausage
½ green bell pepper
½ yellow bell pepper
½ red bell pepper
60 gr cherry tomatoes
½ cup white wine
2 T sp. Olive oil
1 t sp. Fresh oregano leaves.
Mini brioche buns



• Halloumi & Lountza in pitta bread
Ingredients
4 slice halloumi ½ cm thick
4 slice lountza 3 mm thick
4 small pitta bread
4 slice tomato
4 leaves iceberg lettuce
