Recipe

Potato snack with herring and sauce
For 40 portions:


Preparation time: About 45 min.
1. Wash the potatoes very well. Pour water into the pot, add the potatoes and boil. Cook for about 15 minutes until the potatoes are cooked but not too soft. The exact cooking time will depend on the size of the potatoes.
2. Rinse the boiled potatoes with cold water, cool. Then cut into slices about 1 centimeter thick.
3. Line the baking form with baking paper. Generously coat each potato slice with oil on both sides and place in a baking dish. Sprinkle with salt and pepper.
4. Bake in an oven heated to 200 degrees C with a breeze for about 10 minutes until the edges are lightly browned and the top becomes more crispy. Then remove from the oven and set aside to cool.
5. For the sauce, put mayonnaise, Greek yogurt, mustard and curry spices in a bowl.
6. Finely chop the capers, finely chop the parsley, cucumbers, and onion and add to the bowl with the sauce. Mix it up.
7. Cut the herring into bite-sized pieces.
8. Put half a teaspoon of sauce on the potato slice, put a piece of herring on it and serve.

Ingredients

For 40 portions:

16 Units of small potatoes
400g Herring fillet
A bit pepper (black or white pepper)
A bit of salt
A bit of olive oil

Sauce:
16 Spoons of mayonnaise
8 Units pickled cucumbers
4 Unit red onion
8 Tablespoons greek yogurt
4 Tablespoon capers
4 bundle of parsley
4 tablespoon of mustard
2 Tablespoon of curry seasoning
