Potica is one of the most recognizable and traditional Slovenian desserts, which is usually served on holidays. It's a rich, twisted yeast dough cake filled with walnut filling. Potica is the pride of Slovenian culinary heritage and a symbol of homeliness and festive atmosphere.
For 20 walnut portions:
In a bowl, mix the flour, sugar, yeast, vanilla sugar, lemon zest and salt and mix everything. Add the wet ingredients: egg yolk, milk, butter and rum and mix, preferably with a robot. In a warm place, let it rise. Stir 1x more and rise again.
In a bowl, mix the nuts, sugar, vanilla sugar and lemon zest. Heat the sweet cream in the shrimp and pour it over the walnuts and mix. Add the egg, butter and rum and mix. Finally, mix in the snow.
Roll out the dough to about 3mm. Cut the dough into strips of about 10 cm, which are coated with walnut filling and rolled as for potica. Then cut the roll into 10cm long rolls and place them in a baking dish. We pierce them with a toothpick. Let them rise for 30 minutes. Bake at 180 degrees for about 30 minutes.
