Description

Spruce Tree Marmalade Candies are a unique and flavorful treat that highlight the fresh, aromatic essence of young spruce tips. These candies have a delightful chewy texture and a refreshing taste, combining the natural sweetness of sugar with a hint of citrus from lemon juice, making them a perfect fusion of traditional flavors and modern confectionery , ideal for Christmas time.

Instructions:
Preparing the Spruce Infusion:
In a saucepan, combine the fresh spruce tips and water (250 g). Bring to a boil, then reduce the heat and let it simmer for about 10-15 minutes.
Strain the mixture through a fine sieve or cheesecloth to remove the spruce tips, reserving the liquid.
Making the Marmalade:
In a clean saucepan, combine the reserved spruce liquid, sugar (200 g), lemon juice (30 g), agar-agar (5 g), and a pinch of salt.
Bring the mixture to a gentle boil, stirring continuously for about 5-7 minutes until the agar-agar is fully dissolved and the sugar has melted.
Remove from heat and allow it to cool for a few minutes.
Setting the Candies:
Pour the mixture into silicone molds or a shallow tray lined with parchment paper.
Let the mixture cool at room temperature, then refrigerate for at least 2-3 hours, or until fully set.
