Chicken Chestnut Stuffed with Potato, Mushrooms and Butternut


Recipe

Ballotines
Sweat chopped onions in butter and olive oil.
Add chestnuts, cook for 10 minutes and set aside.
Blend the kilo of turkey with salt, pepper and eggs.
At the end, add the onion-chestnut mixture, mixing gently.
Roll the turkey cutlets stuffed with the mixture into ballotines using cling film.
Poach the ballotines.
Remove the cling-film and allow to color.

Hash browns :
Peel potatoes.
Fry them.
Adjust seasoning.

Make sauce with poultry juice.
