Description

Strips of cuttlefish are cooked with lima (broad) beans in a tasty, aromatic stew - a typical Christmas Eve delicacy.


Recipe

METHOD:

Clean the inside and bones of cuttlefish. Cut the cuttlefish into strips. In a saucepan over low heat, sauté the onion and cuttlefish strips; add garlic and tomato paste. Sauté and then add prošek, lima beans and simmer. This stew is best served with polenta.

Ingredients

1 kg fresh cuttlefish
2/3 onions, chopped
5/6 garlic cloves, crushed
2 dcl prošek/prosecco
sea salt
freshly ground pepper
1 dcl extra virgin olive oil
2/3 bay leaves
rosemary twig
150/200 ml tomato paste
300 g fresh broad (lima) beans
Polenta to serve
